Gluten Free Fruity Cookies

Nutty and fruity, with a crackly brown sugar crust, these cookies take less than 30 minutes from start to finish. You only need several ingredients! And Voilà - you are in Cookie heaven!

Ingredients

  • 125 g Dairy free unsalted butter
  • 150 g Brown sugar
  • 1 Pinch of salt
  • 1 Large egg
  • 100 ml Honey
  • 2 tsp Vanilla extract (or vanilla essence)
  • 150 g Ground almonds
  • 100 g Gluten free oats
  • 1 tbsp Gluten free baking powder
  • 4 tbsp Mixed dry fruits (cranberries, raisins, sultanas)
  • 4 tbsp Roasted nuts (chopped almonds, pistachios)

Instructions

  • Preheat the oven to 180°C~ 356°F. Line a baking sheet with parchment paper.
  • Microwave the butter until it's half soft and half melted, then combine it with the brown sugar (reserving some for the top). Add a pinch of salt.
  • Beat the egg in a separate bowl. Then pour in the honey and the vanilla and add to the butter and sugar. Lightly beat until mixed well.
  • Toss the ground almonds, oats, baking powder, dry fruits and chopped nuts and stir until combined.
  • Scoop out approx. 15 balls, place them on parchment paper and press to about ½ inch thick. Sprinkle some brown sugar on the top.
  • Bake for about 15 minutes and until tops have puffed and cracked, and edges are golden brown. Remove from oven and allow them to cool down for 20-30 minutes.
  • Store in an airtight container for up to 5 days.
  • Enjoy!
