Gluten Free Fruity Cookies
Nutty and fruity, with a crackly brown sugar crust, these cookies take less than 30 minutes from start to finish. You only need several ingredients! And Voilà - you are in Cookie heaven!

- 125 g Dairy free unsalted butter
- 150 g Brown sugar
- 1 Pinch of salt
- 1 Large egg
- 100 ml Honey
- 2 tsp Vanilla extract (or vanilla essence)
- 150 g Ground almonds
- 100 g Gluten free oats
- 1 tbsp Gluten free baking powder
- 4 tbsp Mixed dry fruits (cranberries, raisins, sultanas)
- 4 tbsp Roasted nuts (chopped almonds, pistachios)
Preheat the oven to 180°C~ 356°F. Line a baking sheet with parchment paper.
Microwave the butter until it's half soft and half melted, then combine it with the brown sugar (reserving some for the top). Add a pinch of salt.
Beat the egg in a separate bowl. Then pour in the honey and the vanilla and add to the butter and sugar. Lightly beat until mixed well.
Toss the ground almonds, oats, baking powder, dry fruits and chopped nuts and stir until combined.
Scoop out approx. 15 balls, place them on parchment paper and press to about ½ inch thick. Sprinkle some brown sugar on the top.
Bake for about 15 minutes and until tops have puffed and cracked, and edges are golden brown. Remove from oven and allow them to cool down for 20-30 minutes.
Store in an airtight container for up to 5 days.
