Caribbean Style Banana Fritters

- 1 Banana (medium, ripe)
- 1 Egg medium
- 1 tbsp Honey
- 3 tbsp Gluten free white flour
- 1 tsp Gluten free baking powder
- 1 tbsp Desiccated coconut
- 1 tsp Vanilla extract
- 1 tsp Mixed spice (cinnamon, coriander, dill, ginger, cloves and nutmeg)
- Pinch of salt
In a small bowl mash the banana until it's creamed, then place it in a food processor and add the rest of the ingredients. Pulse until well incorporated.
Preheat olive oil in a frying pan. Pour half of the batter. Fry on a medium heat or until golden brown on both sides.
You can serve with fresh fruits, honey, maple syrup or fresh cream. The choice is yours!
