These yummy, moist and spongy Caribbean style banana fritters are so easy to make. It will only take you 20 minutes, which makes them an ideal choice for busy people. They are gluten, dairy and lactose free and suitable for vegetarians

My partner loves banana fritters. Actually, it was him who inspired me to create a healthier recipe based on the classic one, and in the same time it fits with my gluten intolerance

Banana Fritters Preparation

Most households buy too many bananas that eventually end up wasted.  I always try to utilise the ripe bananas by using them in smoothies, cakes, muffins etc.  Today I needed something quick and easy for breakfast. I was also craving the classic fritter taste. So I thought of banana fritters but in the same time I wanted something light and low in calories. I swapped the sugar for honey and excluded the milk. However, if you prefer to add some milk in it, I suggest you use soya, almond or coconut milk. They are lactose free healthier substitutes of the full fat skimmed milk.

Equipment

  • Food processor or blender

Ingredients

  • 1 Banana (medium, ripe)
  • 1 Egg medium
  • 1 tbsp Honey
  • 3 tbsp Gluten free white flour
  • 1 tsp Gluten free baking powder
  • 1 tbsp Desiccated coconut
  • 1 tsp Vanilla extract
  • 1 tsp Mixed spice (cinnamon, coriander, dill, ginger, cloves and nutmeg)
  • Pinch of salt

Instructions

  • In a small bowl mash the banana until it's creamed, then place it in a food processor and add the rest of the ingredients. Pulse until well incorporated.
  • Preheat olive oil in a frying pan. Pour half of the batter. Fry on a medium heat or until golden brown on both sides.
  • You can serve with fresh fruits, honey, maple syrup or fresh cream. The choice is yours!
