Tofu is a great meat substitute in vegan recipes. It’s a plant-based and packed with protein. One of the most important things to remember about tofu is its basic whole food nature. It has been a staple in various diets for years.

Tofu is a good source of protein and contains all nine essential amino acids. It is also a valuable plant source of iron and calcium and the minerals manganese and phosphorous. In addition to this, it also contains magnesium, copper, zinc and vitamin B1.

Easy Tofu With Snow Pea And Fried Rice

The Recipe


To make this deliciously easy recipe, start with marinating the tofu for at lest 30 minutes. Then strain and cook it in a frying pan until it’s golden brown. Set aside but keep hot.

Then in a saucepan, add another 2 tbsp olive oil. Add the onions, bell pepper and the snow peas. Sauté for 5 minutes, then add the rice, pinch of salt, black pepper and paprika and stir until well combined. Cook for additional 2-3 minutes, then add 1 tbsp soy sauce and remove from the heat.

Serve the tofu and the fried rice immediately, garnished with few boiled snow peas.

Ingredients

For the Tofu + Marinade

  • 250 g Tofu (diced)
  • 60 ml Water
  • 1 tsp Apple cider vinegar
  • 1 tbsp Maple syrup
  • 2 tbsp Soy sauce
  • 1 tbsp Corn starch
  • 1 tsp Garlic powder
  • 1 tbsp Chives (chopped)
  • 1 tbsp Mixed sesame seeds (roasted)
  • 1 tbsp Extra virgin olive oil

For the Rice

  • 500 g Long grain rice (cooked and chilled)
  • 2 tbsp Extra virgin olive oil
  • ½ Bell pepper (finely diced)
  • 1 Onion (chopped)
  • 100 g Snow peas (diced)
  • 1 Pinch of salt
  • 1 Pinch black pepper
  • 1 Pinch of paprika
  • 1 tbsp Soy sauce

Instructions

  • In a medium bowl, mix all the marinade ingredients (water, apple cider vinegar, maple syrup, soy sauce, corn starch, garlic powder and chopped chives), leaving out the sesame seeds, until well combined. Add the tofu and let it marinate in the fridge for 30-40 minutes.
  • Remove the tofu from the fridge and strain it. Keep the marinade.
  • In a medium frying pan, heat 1 tbsp olive oil over medium heat. Toss the tofu in the pan and cook it until it turns golden brown. Remove from the heat and add 1 tbsp mixed sesame seeds. Set aside but close to the heat to keep hot.
  • In a saucepan, add another 2 tbsp olive oil. Add the onions, bell pepper and the snow peas. Sauté for 5 minutes, then add the rice, pinch of salt, black pepper and paprika and stir until well combined. Cook for additional 2-3 minutes, then add 1 tbsp soy sauce and remove from the heat.
  • Serve the tofu and the fried rice immediately, garnished with few boiled snow peas.
