These No Bake Coconut Peanut Butter Bars are very easy to make and high in nutrients. They are suitable for vegetarians and pescaterian and are gluten, dairy and lactose free. However, if you are vegan, you can easily substitute the honey with maple syrup, stevia or sugar and the dark chocolate with vegan version of it.  

The Coconut Peanut Butter Bars are packed with healthy fats and protein thanks to the peanut butter. But don’t you feel guilty consuming peanut butter because you fear the fat content is too high? Don’t be and here is why.

Equipment

  • Food processor

Ingredients

  • 100 g Desiccated coconut
  • 100 ml Coconut milk
  • 3 tbsp Peanut butter
  • 2 tbsp Honey
  • 50 g Dark chocolate (I used Green & Black's Organic Dark Chocolate 70%)

Instructions

  • Combine all ingredients except the dark chocolate in a food processor and pulse until smooth.
  • Place the mixture into a lined tin or container and press down firmly. Chill for 30 minutes until firm. Remove from the fridge and cut into bars.
  • Melt the dark chocolate, allow it to cool down for 4-5 minutes and dip each bar in it. Chill in the fridge for 20 minutes.
  • Enjoy!
