Using a sharp knife, cut about half an inch all around the grapefruit until is completely peeled. Using the knife, cut alongside the membranes that separate the grapefruit segments so they are removed. Place the grapefruit slices in the salad bowl.

Cut the watercress and toss it into the bowl. Mix gently all ingredients. In a small bowl, mix all dressing’s ingredients. Whisk well until emulsified.

Pour it over the salad and serve in individual plates.

“Life… is like a grapefruit. Well, it’s sort of orangey-yellow and dimpled on the outside, wet and squidgy in the middle. It’s got pips inside, too. Oh, and some people have half a one for breakfast.”
