Buttery, crumbly and coconutty – these 3 Ingredients Coconut Cookies are simply delicious and very easy to make. They are excellent choice for vegans, vegetarians and people with gluten, dairy and lactose intolerance. All you need is 3 ingredients – coconut flour, coconut oil and stevia.Â
These coconut cookies are perfect with a cup of tea, coffee or hot chocolate or you can eat them by themselves. You can also have them with ice-cream, sundae or fresh fruits.
I prefer to store cookies in an airtight container between parchment paper to keep them from sticking together. However, if you don’t have parchment paper, you can tuck a slice of white sandwich bread inside the container. The cookies can also be frozen – in a freezer safe container or bag.

3 Ingredients Coconut Cookies
Ingredients
- 3 tbsp Coconut flour
- 2 tbsp Coconut oil
- 1 tbsp Stevia (substitute with honey, maple syrup or sugar)
Instructions
- Preheat the oven to 180°C~ 356°F. Line a baking sheet with parchment paper.
- In a medium bowl, mix all ingredients together and shape into balls. Place them on parchment paper and press gently down with a fork.
- Bake for 10 mins until browned. Sprinkle some desiccated coconut on the top and allow the cookies to cool down for 10-15 minutes.
- Serve with tea or coffee. Enjoy!
