According to Livestrong.com raw coconut meat is packed with vitamins and minerals. Raw coconut calories per 100 grams total 354 or 18 percent of a 2,000-calorie diet. In other words, there are also 3.3 grams of protein in coconut per serving, making this a good source of plant-based protein.

Raw Coconut’s Benefits

Coconut is beneficial but even beyond the variety of nutrients it provides. For example, coconut:

  • Can help to lower cholesterol.
  • Doesn’t seem to negatively affect cardiovascular health, despite its saturated fat content. However, the saturated fat content in coconut is not comparable to the unhealthy saturated fats found in animal products.
  • Is considered to have anti-diabetic activity.
  • Coconut is rich in antioxidants and other beneficial compounds.
  • Is good for people on ketogenic diets: The high fat content and high nutrient value of coconut make it an ideal plant-based food for people following low-carbohydrate diets like the ketogenic diet. It’s also naturally sweet but still low in carbohydrates — which you won’t find in many foods that have low carbohydrate contents.
  • May have compounds that can help prevent or treat Alzheimer’s disease.

Coconut And Lime Mini Desserts

Equipment

Ingredients

  • 100 g Almonds
  • 50 g Dried prunes
  • 25 g Desiccated coconut
  • 200 ml Coconut milk
  • 100 ml Water
  • 1 tbsp Vanilla extract
  • 2 tbsp Honey
  • 1/2 Lime
  • 1 sachet Gelatine

Instructions

  • Blend the almonds and the prunes in a food processor and divide the mixture between 12 glasses or small bowls. Set to chill for 30 mins.
  • Boil 100 ml water and sprinkle the gelatine over the liquid. Stir until completely dissolved.
  • Mix together the coconut milk, the desiccated coconut, the vanilla and the honey until smooth. Add the lime juice and the gelatin.
  • Spread the mixture between the 12 glasses/bowls and chill for 2 hours.
  • Sprinkle desiccated coconut on the top and serve plain or add fresh fruits.
  • Enjoy!
