The Recipe
To make this delicious gluten free plum cake, start by preheating the oven to 180°C~356°F. Then grease and line a baking tray.
In a food processor, beat the eggs, maple syrup and melted butter. Then add the gluten free flour, baking powder, vanilla extract, lemon juice and a pinch of salt. Pulse for 1-2 minutes.
Pour the batter in the greased baking tray and bake for 15 minutes or until the cake starts to set. Then place the halved plums on the top and gentry press each of them with your fingers, so they sink a bit into the cake. Bake for additional 20-25 minutes or or until cooked when tested with a skewer.
Remove the cake from the oven and allow it to cool down for 15-20 minutes.
Store in an airtight container for up to 4 days.

- 6 tbsp Maple syrup substitute with honey, golden syrup or sugar
- 75 g Unsalted butter melted
- 150 g Gluten free white flour
