I love everything about summer. It’s warm, it’s sunny, it reminds me of holiday, beach and sea. So to take mango to the next level, I created this refreshing and zesty mango and lime parfait. It’s great for those warm summer days or nights. It’s easy to make and it only takes 10 mins to prepare (plus 2 hours to chill in the fridge). Served as dessert, with tea or coffe or on its own, you will definitely fall in love with it.

Benefits of Mangoes

Luscious and sweet, in some parts of the world, mango is known as the “king of fruits”. It is native to India and Southeast Asia and has been cultivated for over 4,000 years. There are hundreds of types of mangoes, each with a unique taste, shape, size and colour.

Mango is one of the sweetest fruits and lower in fiber than other fruits, so moderation is key — it’s best to limit mango to no more than two cups (330 grams) per day at most. Summary Mango is delicious and can be enjoyed in many ways. However, it contains more sugar than many other fruits.


Ripe Mangoes

One cup (165 grams) of mango provides nearly 70% of the recommended daily intake for vitamin C — a water-soluble vitamin that aids your immune system, helps your body absorb iron and promotes growth and repair. Mango is also packed with polyphenols — plant compounds that function as antioxidants. They are important as they protect your cells against free radical damage.

Mango and Lime Parfait

To take mango to the next level, I created this refreshing and zesty mango and lime parfait. It's great for those warm summer days or nights. It's easy to make and it only takes 10 mins to prepare (plus 2 hours to chill in the fridge).

Equipment

  • Blender

Ingredients

  • 200 ml Soya milk
  • 1 Mango (medium, sliced)
  • 1 Lime (sliced)
  • 1 Banana
  • 50 g Spinach
  • 4 tbsp Stevia (powder or crystals)
  • 1 sachet Gelatine (vegan)
  • 2 pcs Dark chocolate (vegan, optional)

Instructions

Lime Parfait

  • Boil 100 ml water and sprinkle ½ sachet gelatine over the liquid. Stir until completely dissolved.
  • Blend 100 ml soya milk, sliced lime (reserve 2 slices for the top), spinach, ½ banana and 2 tbsp stevia. Add the gelatine and mix well. Pour into 2 jars or bowls and chill in the fridge for 1 hour or until it's set.

Mango Parfait

  • Repeat the above step 1.
  • Then in a blender, mix together 100 ml soya milk, mango (reserving some for the top), ½ banana and 2 tbsp stevia until smooth. Add the gelatine and mix well. Pour on the top of the lime parfait and chill in the fridge for another 1 hour (or 2).
  • Garnish with lime, mango and grated dark chocolate (optional) and serve chilled.
  • Enjoy!
