I only used veggies that I like, however you can mix and match. Use your imagination! We are in the middle of the summer and there are so many fresh vegetables out there you can choose from. Whatever choice you make, it will be the right one. As there are no “right” and “wrong” vegetables.

Roasted Vegetables with King Prawns
Ingredients
- 3 Carrots
- 2 Potatoes
- 1 Courgette
- 1 Onion red
- 3 cloves Garlic (chopped)
- ¼ cup Dill (chopped)
- 150 g King Prawns (cooked, pealed)
- 3 tbsp Extra virgin olive oil
- 1 tbsp Honey
- 1 tsp Salt
- 1 tsp Black pepper
Instructions
- Wash and peal all vegetables, then cut them into slices, 1" thick.
- Place the sliced vegetables in a medium bowl. Toss the chopped dill and garlic (leaving some for the prawns), salt, pepper and pour 2 tbsp olive oil on the top. Mix well and allow the vegetables to marinate for about 30 minutes.
- Preheat the oven to 180°C~356°F. Then grease and line a roasting tin. I used square ceramic oven dish.
- Place the marinated vegetables in the dish and let them roast for 20-25 minutes or until tender.
- In the meantime wash the king prawns and put them in a small bowl. Add salt, pepper, 1 tbsp olive oil, 1 tbsp honey, dill and garlic. Mix well and place on the top of the vegetables. Roast for another 10 minutes.
- Serve immediately while hot.
